
Learned it from a friend 'Fatima Bassa' years ago. Very easy to prepare and it's a quick 1 pot meal. My kids love it very much......
- Season chicken pieces(skinless) with soy sauce, chopped garlic & some lime juice.
- Boil water with olive oil, 1 maggi chicken cube and a bit of salt. (Equal cups of rice and water:-How many cups of rice you need, that much of water you will need to boil.)
- Heat olive oil in a pot, saute chicken pieces, until cooked.
- Add 1 large chopped onion and chopped ham (optional), some carrots and 2 tomatoes cubes.(I use 1 can chopped tomatoes). (can add in cilantro & green bell-pepper -optional).
- Stir well, add 1 package of sazon; or salt and pepper and a bit of sugar if can't find sazon.
- Once the tomatoes resolve, throw in some chopped spinach and some cilantro.
- Then add in rice. Stir to coat well. Add in the boiled water you boil earlier.
- Don't cover, medium low fire cooked till water dry. Stir to mix, cover. Off fire. Serve.
- I strongly suggest non-stick pot.!! :)
