Southern Fried Chicken
Ingredients:
- One whole chicken cut into pieces (or drummettes)
- Lawry's Seasoning Salt
- Poultry seasoning
- 1 eggs
- Salt & Pepper
- 1/4 cup of all purpose flour
- 1/4 cup of Aunt Jemima Pancake Mix
- Oil for frying
- Season both sides of chicken with all seasonings (except flour and pancake mix). Put chicken in a shallow pan, cover with aluminum foil and allow to sit in refrigerator for at least 2 hours.
- Preheat the oil to just above medium. Oil must be hot, but not scalding.
- Combine flour and pancake mix in a large Zip lock bag. Put chicken pieces in bag, close it and shake. Coat the chicken completely and put chicken in the oil. Fry until golden brown.
- Take chicken out and put on paper towels to absorb excess oil. Let cool for 5 to 10 minutes.
