Southern Fried Chicken


Ingredients:
  • One whole chicken cut into pieces (or drummettes)
  • Lawry's Seasoning Salt
  • Poultry seasoning
  • 1 eggs
  • Salt & Pepper
  • 1/4 cup of all purpose flour
  • 1/4 cup of Aunt Jemima Pancake Mix
  • Oil for frying
  1. Season both sides of chicken with all seasonings (except flour and pancake mix). Put chicken in a shallow pan, cover with aluminum foil and allow to sit in refrigerator for at least 2 hours.
  2. Preheat the oil to just above medium. Oil must be hot, but not scalding.
  3. Combine flour and pancake mix in a large Zip lock bag. Put chicken pieces in bag, close it and shake. Coat the chicken completely and put chicken in the oil. Fry until golden brown.
  4. Take chicken out and put on paper towels to absorb excess oil. Let cool for 5 to 10 minutes.
