Combine:
- 4 chopped spring onion
- 1 clove crushed garlic,
- 1 tsp grated ginger,
- 1 tsp sambal oelek(if want spicy, can put a bit more),
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1 Tbsp lemon juice
- 2/3 cup of chopped unsalted roasted peanuts. (I put it in the blender to make it more fine).
- Peel and devein the shrimp.
- Add shrimp to the 'combined ingredients' above in a plastic bag-mix well and let it sit in the refrigerator for an hour or two or overnight.
- Heat oil, throw in the whole bag of shrimp, stir fry on high heat until the shrimp are cooked.
- Done :-)...serve....
