PEANUT SHRIMP




Combine:  
  • 4 chopped spring onion
  • 1 clove crushed garlic,
  • 1 tsp grated ginger,
  • 1 tsp sambal oelek(if want spicy, can put a bit more),
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1 Tbsp lemon juice
  • 2/3 cup of chopped unsalted roasted peanuts. (I put it in the blender to make it more fine).
  1. Peel and devein the shrimp.
  2. Add shrimp to the  'combined ingredients' above in a plastic bag-mix well and let it sit in the refrigerator for an hour or two or overnight.
  3. Heat oil, throw in the whole bag of shrimp, stir fry on high heat until the shrimp are cooked.
  4. Done :-)...serve....
