Chili Chicken
- Chicken pieces marinate with a bit of salt,turmeric powder, garlic/ginger/onion paste
- Potatoes & Carrots cubes (optional)
- Cinnamon Stick/Star Anise/Clove/Curry Leaves --*A
- 1 Tbsp Chili Powder (can add another Tbsp if prefer more spicy)
- 2 Tbsp Curry Powder
- 1 1/2 cups Water or Chicken broth (more flavour)
- Salt & Pepper to taste
- Heat oil , add in *A, stir fry until fragrant, add in the marinated chicken pieces.
- Stir fry every once in a while, until the chicken is half cooked, add in the potatoes & carrots. Stir.
- Scoop in the curry powder and chili powder, stir well then add in water or broth.
- Stir well, once boiled, slow the fire and let it cook until chicken and potatoes & all are well cooked. In between, make sure to stir every now and then.
- Salt & pepper to taste. Let the sauce thicken to the consistency that you like. Off fire and serve with rice.
