For the dough:
- 2 ½ cups sweet rice flour
- ½ cup regular rice flour
- ½ cup sugar
- 1 cup hot water
- Mix both flours together.
- In another bowl, put in the sugar and add the hot water to the sugar, stir till it’s resolved.
- Now, pour the liquid into the flour mixture. Mix well. (texture will be like cookie dough)
- Set aside.
Filling & Coating:
- 1 can (18oz) of Sweetened Red bean Paste.
- 1 ½ cups sesame seeds.
- A bowl of warm water.
- Flour the ‘work-station’. Flour your hands too.
- Separate the dough into 12 balls.
- Flatten the ball, add in the red bean paste in the middle and close it to seal gently. Roll it, pet it and press it-very gently.
- Then dip the ball into the warm water and into the sesame seeds—roll to coat well.
- Set aside for deep fry later.
- Repeat the circle one ball at a time until its all done.
- Now, heat oil in medium high. Fry the ball one at a time. Do not crowd the pan/wok. Make sure the oil is hot before put the ball in.
- Serve!
