Creamy Clam Chowder
- Some bacon strips, cut into pieces
- 2 Tbsp vegetable oil
- 1 medium onion, finely chopped
- 2 Tbsp flour
- 1 (8oz) bottle clam juice
- 3 cups whole milk
- 1 large potato, peeled - cut small pieces
- 2 (6.5oz) cans chopped clams, drained
- dash of hot sauce
- salt
- Cilantro
- Heat oil, throw in bacon pieces in saucepan, saute, stirring often.
- Add in onion and cook, stirring until softened.
- Add flour and cook, stirring then pour in clam juice (and a bit of water) and bring to boil, stirring well.
- Add milk, potato, clams and hot sauce. Season with salt.
- Increase heat a bit, bring to boil then reduce heat and simmer until potatoes are fork tender.
- Ladle chowder into bowls, sprinkle with cilantro and serve hot.
