- Wash the okra really well and pat dry. Chop off the base of each okra & slit through the center.
- Bring a large pot of water to boil. Add the veggies and bring to boil again which will take 2 - 3 minutes. Drain and cool dry.
- Meanwhile, finely chop onion, tomato and a few green chillies. Add a little bit of salt and lots of freshly squeezed lime.
- Adjust seasoning according to your taste.
- Using a small teaspoon, fill a little bit of the mixture to each okra. Line up beautifully on a plate and serve. Guaranteed to add color to any rice dish & curry (dhal would be good). Definitely a crowd pleaser.
