Kuih Ketayap
Filling:
- Crushed gula melaka/palm sugar
- 2 Tbsp granulated sugar
- Water
- Grated coconut
- Bring to boil the palm sugar, sugar & water till all the sugar have dissolved.(medium/slow fire)
- Put in the grated coconut & stir well. When mixture is quite dry, remove and leave to cool.
Batter:
- A drop or 2 of screwpine juice/pandan leaves
- All purpose flour
- Water
- A bit of salt
- 2 eggs
- A dash of green coloring
- Oil for making the crepe
- Combine pandan juice, flour, salt, eggs & water till smooth. Strain if necessary. Then add a little green coloring.
- Heat oil in pan. Pour in a little batter. Tilt pan round to from a thin pancake/crepe like.
- Cook over medium heat till light brown on both sides.
- Remove and put some coconut filling at one end of the crepe, fold over and roll up neatly.
- Arrange on a serving plate. Serve.
