Kuih Ketayap

Filling:
  • Crushed gula melaka/palm sugar
  • 2 Tbsp granulated sugar
  • Water
  • Grated coconut
  1. Bring to boil the palm sugar, sugar & water till all the sugar have dissolved.(medium/slow fire)
  2. Put in the grated coconut & stir well. When mixture is quite dry, remove and leave to cool.
Batter:
  • A drop or 2 of screwpine juice/pandan leaves
  • All purpose flour
  • Water
  • A bit of salt
  • 2 eggs
  • A dash of green coloring
  • Oil for making the crepe
  1. Combine pandan juice, flour, salt, eggs & water till smooth. Strain if necessary. Then add a little green coloring.
  2. Heat oil in pan. Pour in a little batter. Tilt pan round to from a thin pancake/crepe like.
  3. Cook over medium heat till light brown on both sides.
  4. Remove and put some coconut filling at one end of the crepe, fold over and roll up neatly.
  5. Arrange on a serving plate. Serve.
