Mee Goreng/Stir Fried Rice Noodles


  • 1 package Noodles or spaghetti
  • 2 Tbsp Oil
  • 1 Egg, beaten
  • Handful of Bean sprouts
  • 1 cup of chicken cubes
  • 1 large Onion, chopped
  • 2 cloves of garlic-crushed
  • 2 pieces of fried tofu (beancurd)- cut cubes
  • 1 cup Cabbage, sliced
  • 2 Tbsp soy sauce
  • 1/4 tsp sugar
  • 1 Tbsp ketchup
  • Salt to taste
  • 1 Tomato, sliced (or cut cubed, throw in together with the cabbage when cooking)
  • 1 Lemon/Lime – juice (optional)
  • Some chopped spring onion(or cilantro)
  1. If using spaghetti, cook it in boiling water until just tender, then drain and toss in a tablespoon of olive oil to stop it sticking together.
  2. Heat the oil in a wok or frying pan and fry the garlic, onion, then the chicken, stir fry until no more pink then add in cabbage.
  3. Add the noodles and stir fry for 10 minutes more.
  4. Make a gap in the centre of the noodles and add the egg. Stir it in to scramble it.
  5. Add the fried tofu, tomato ketchup, soy sauce, salt and sugar. Mix well.
  6. Just before transferring to a plate, add the beansprouts and stir for about 30 seconds.
  7. Sprinkle with lemon juice and chopped spring onion to serve.
