Mee Goreng/Stir Fried Rice Noodles
- 1 package Noodles or spaghetti
- 2 Tbsp Oil
- 1 Egg, beaten
- Handful of Bean sprouts
- 1 cup of chicken cubes
- 1 large Onion, chopped
- 2 cloves of garlic-crushed
- 2 pieces of fried tofu (beancurd)- cut cubes
- 1 cup Cabbage, sliced
- 2 Tbsp soy sauce
- 1/4 tsp sugar
- 1 Tbsp ketchup
- Salt to taste
- 1 Tomato, sliced (or cut cubed, throw in together with the cabbage when cooking)
- 1 Lemon/Lime – juice (optional)
- Some chopped spring onion(or cilantro)
- If using spaghetti, cook it in boiling water until just tender, then drain and toss in a tablespoon of olive oil to stop it sticking together.
- Heat the oil in a wok or frying pan and fry the garlic, onion, then the chicken, stir fry until no more pink then add in cabbage.
- Add the noodles and stir fry for 10 minutes more.
- Make a gap in the centre of the noodles and add the egg. Stir it in to scramble it.
- Add the fried tofu, tomato ketchup, soy sauce, salt and sugar. Mix well.
- Just before transferring to a plate, add the beansprouts and stir for about 30 seconds.
- Sprinkle with lemon juice and chopped spring onion to serve.
