Bee-Hoon Soup


  • 1/2 packet of bee hoon (pre-soaked in water for 30 minutes to soften)
  • Shrimps
  • Some choy sum (chinese mustard leaves)--I used broccoli in this
  • 5 to 8 shallots (sliced thinly)
  • 3 tablespoons of canola oil
  • 6 cups of anchovies stock
  • 2 teaspoons of light soy sauce (optional)
  • a couple of dashes of white pepper powder
  • Salt to taste
  1. Fry shallots in oil under medium heat till golden brown. Remove fried shallots from oil and set aside. (or buy ready made fried shallot).
  2. Add anchovies/ikan bilis stock and bring to boil.
  3. Add broccoli and shrimp into boiling stock.
  4. Add seasoning to taste.
  5. Finally the bee hoon, let it boil a bit. Off fire.
  6. Separate into individual bowls and sprinkle fried shallots and serve.
