Bee-Hoon Soup
- 1/2 packet of bee hoon (pre-soaked in water for 30 minutes to soften)
- Shrimps
- Some choy sum (chinese mustard leaves)--I used broccoli in this
- 5 to 8 shallots (sliced thinly)
- 3 tablespoons of canola oil
- 6 cups of anchovies stock
- 2 teaspoons of light soy sauce (optional)
- a couple of dashes of white pepper powder
- Salt to taste
- Fry shallots in oil under medium heat till golden brown. Remove fried shallots from oil and set aside. (or buy ready made fried shallot).
- Add anchovies/ikan bilis stock and bring to boil.
- Add broccoli and shrimp into boiling stock.
- Add seasoning to taste.
- Finally the bee hoon, let it boil a bit. Off fire.
- Separate into individual bowls and sprinkle fried shallots and serve.
